Sweet Potato Waffles (Gluten Free)

  • 2 eggs
  • 2 Tbsp ground flaxseed/flaxseed meal
  • 2 Tbsp coconut oil, melted
  • ½ cup sweet potato, mashed
  • ¼ tsp vanilla extract
  • ¼ tsp baking powder
  • 1 tsp cinnamon
  • Optional: almond butter for topping


  1. In a bowl, whisk together eggs, vanilla, cinnamon, flaxseed meal, and baking powder
  2. Fold in mashed sweet potato and stir in melted coconut oil
  3. Heat a waffle iron and pour in ¼ cup of batter for 4” waffle iron (really you want the iron to be about ⅔ full of batter). Cook for 5-6 minutes.
  4. Enjoy plain or top with a bit of almond butter!
