Sweet Potato Waffles (Gluten Free)

- 2 eggs
- 2 Tbsp ground flaxseed/flaxseed meal
- 2 Tbsp coconut oil, melted
- ½ cup sweet potato, mashed
- ¼ tsp vanilla extract
- ¼ tsp baking powder
- 1 tsp cinnamon
- Optional: almond butter for topping
Instructions
- In a bowl, whisk together eggs, vanilla, cinnamon, flaxseed meal, and baking powder
- Fold in mashed sweet potato and stir in melted coconut oil
- Heat a waffle iron and pour in ¼ cup of batter for 4” waffle iron (really you want the iron to be about ⅔ full of batter). Cook for 5-6 minutes.
- Enjoy plain or top with a bit of almond butter!
