Grilled Chimichurri Chicken
Chimichurri is a delicious sauce originating from Argentina that can be made a variety of different ways. The chicken can also be baked or pan fried if you don’t have access to a grill. Choosing chicken thighs over breasts makes this recipe extra flavorful.

- 1 lb boneless skinless chicken thighs
- ¼ cup olive oil
- 2 cloves garlic
- ½ teaspoon dried oregano
- ¼ cup fresh parsley
- ½ cup fresh cilantro
- Juice of ½ lime
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Add the olive oil, garlic, oregano, parsley, cilantro, lime juice, salt and pepper to a food processor and pulse until smooth.
- Trim chicken thighs and place in a large bowl. Pour half of the sauce over the chicken and toss well to coat. Cover and marinate for at least 30 minutes.
- Grill the chicken on medium-high heat for about 5 minutes per side or until juices run clear.
- Drizzle with remaining sauce and serve.
