Description

Chimichurri is a delicious sauce originating from Argentina that can be made a variety of different ways. The chicken can also be baked or pan fried if you don’t have access to a grill. Choosing chicken thighs over breasts makes this recipe extra flavorful.


Ingredients

Scale
  • 1 lb boneless skinless chicken thighs
  • ¼ cup olive oil
  • 2 cloves garlic
  • ½ teaspoon dried oregano
  • ¼ cup fresh parsley
  • ½ cup fresh cilantro
  • Juice of ½ lime
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Add the olive oil, garlic, oregano, parsley, cilantro, lime juice, salt and pepper to a food processor and pulse until smooth.
  2. Trim chicken thighs and place in a large bowl. Pour half of the sauce over the chicken and toss well to coat. Cover and marinate for at least 30 minutes.
  3. Grill the chicken on medium-high heat for about 5 minutes per side or until juices run clear.
  4. Drizzle with remaining sauce and serve.
