- 2 cups almond flour
- 1 teaspoon baking powder
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon salt
- ¼ cup coconut oil, melted and cooled
- ½ cup pumpkin puree
- ¼ cup maple syrup
- 2 eggs
Cinnamon Sugar
- ½ cup coconut sugar
- 1 teaspoon cinnamon
- ½ cup coconut oil, melted
Instructions
- Preheat the oven to 325 degrees and lightly grease a donut pan.
- In a large mixing bowl, stir together the almond flour, baking powder, pumpkin pie spice and salt.
- In a separate bowl, stir together the coconut oil, pumpkin puree, maple syrup and eggs. Add the wet ingredients to the dry and mix until well combined.
- Spoon the batter into the donut pan and smooth down the tops of the donuts with the back of a spoon. Bake for 10-12 minutes.5. Stir together the coconut sugar and cinnamon and pour the mixture onto a plate. Dip each donut into coconut oil, then coat with cinnamon sugar.
