Tahini Chocolate Chunk Blondies
These blondies are perfectly chewy and have a slight nutty flavor with plenty of chocolatey goodness in each bite! You won’t believe they’re dairy, grain and refined sugar free.

- ⅔ cup tahini
- 1 egg
- ¼ cup coconut oil, melted and cooled
- 1 cup coconut sugar
- 2 teaspoons vanilla extract
- 1 ½ cups almond flour
- ½ cup coconut flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 paleo dark chocolate bar, chopped
Instructions
- Preheat the oven to 350 degrees and line an 8×8 baking dish with parchment paper.
- In a large mixing bowl, stir together the tahini, egg, coconut oil, coconut sugar and vanilla.
- Add the almond flour, coconut flour, baking soda and salt. Mix until a dough forms and gently fold in the chocolate chunks.
- Pour the batter into the baking dish and smooth the top with the back of a spoon. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
- Let cool, slice into 16 blondies and serve.
