Tahini Chocolate Chunk Blondies

Description

These blondies are perfectly chewy and have a slight nutty flavor with plenty of chocolatey goodness in each bite! You won’t believe they’re dairy, grain and refined sugar free.


Ingredients

Scale
  • ⅔ cup tahini
  • 1 egg
  • ¼ cup coconut oil, melted and cooled
  • 1 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 paleo dark chocolate bar, chopped

Instructions

  1. Preheat the oven to 350 degrees and line an 8×8 baking dish with parchment paper.
  2. In a large mixing bowl, stir together the tahini, egg, coconut oil, coconut sugar and vanilla.
  3. Add the almond flour, coconut flour, baking soda and salt. Mix until a dough forms and gently fold in the chocolate chunks.
  4. Pour the batter into the baking dish and smooth the top with the back of a spoon. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
  5. Let cool, slice into 16 blondies and serve.
