Ingredients

  • 1 banana
  • 2 eggs
  • 1 Tbsp coconut oil, melted
  • ¼ cup ground flaxseed
  • ¼ cup blueberries, fresh or frozen
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Mash banana in a bowl. Mix in eggs, melted coconut oil, ground flaxseed, cinnamon, and vanilla extract.
  2. Fold in blueberries.
  3. Bring a small pan to medium/low heat and pour 1-2 tbsp batter in the pan. Allow to cook for 2 minutes each side.
  4. Enjoy!
