Blueberry Banana Flax Pancakes

- 1 banana
- 2 eggs
- 1 Tbsp coconut oil, melted
- ¼ cup ground flaxseed
- ¼ cup blueberries, fresh or frozen
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Mash banana in a bowl. Mix in eggs, melted coconut oil, ground flaxseed, cinnamon, and vanilla extract.
- Fold in blueberries.
- Bring a small pan to medium/low heat and pour 1-2 tbsp batter in the pan. Allow to cook for 2 minutes each side.
