Summer Salad with Grapefruit and Almonds

Ingredients

- 2 cups lettuce, chopped
- 1 cup baby spinach
- 1 English cucumber, sliced
- 1 pink grapefruit, sliced
- 3 tomatoes, sliced
- 8 radishes, sliced
- 2 green onions, chopped
- Few basil leaves, chopped
- 20–25 almonds
- 2 tablespoons chia seeds
- 3 slices bacon, chopped
For the dressing
- 2 tablespoons olive oil
- ΒΌ cup freshly squeezed lemon juice
- 1 teaspoon salt
Instructions
- Place the bacon in a pan and cook for a few minutes until crispy.
- Put the lettuce and spinach in a large salad bowl.
- Add the tomatoes, cucumber, radishes, green onions, grapefruit and basil.
- Add the dressing ingredients in a small jar with a lid and shake well.
- Pour over the veggies and stir well.
- Top with chia seeds, bacon pieces and almonds to serve.
