Summer Salad with Grapefruit and Almonds

Ingredients

Scale
  • 2 cups lettuce, chopped
  • 1 cup baby spinach
  • 1 English cucumber, sliced
  • 1 pink grapefruit, sliced
  • 3 tomatoes, sliced
  • 8 radishes, sliced
  • 2 green onions, chopped
  • Few basil leaves, chopped
  • 2025 almonds
  • 2 tablespoons chia seeds
  • 3 slices bacon, chopped

For the dressing

  • 2 tablespoons olive oil
  • ¼ cup freshly squeezed lemon juice
  • 1 teaspoon salt

Instructions

  1. Place the bacon in a pan and cook for a few minutes until crispy.
  2. Put the lettuce and spinach in a large salad bowl.
  3. Add the tomatoes, cucumber, radishes, green onions, grapefruit and basil.
  4. Add the dressing ingredients in a small jar with a lid and shake well.
  5. Pour over the veggies and stir well.
  6. Top with chia seeds, bacon pieces and almonds to serve.
