Taco Stuffed Sweet Potatoes
These taco stuffed sweet potatoes are great for meal prep, since both the potatoes and ground beef can be prepared in advance. Ground chicken or turkey also works great instead of beef.

- 2 large sweet potatoes
- 1 teaspoon olive oil
- ½ pound ground beef
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- ¼ cup diced white onion
- ¼ cup salsa
- ¼ cup guacamole
- Fresh cilantro and jalapenos for serving
Instructions
- Preheat the oven to 400 degrees. Pierce the sweet potatoes with a fork and coat them lightly in olive oil. Bake for 40-50 minutes until tender.
- While the potatoes bake, saute the beef with the garlic in a large skillet over medium high heat. Continue cooking and breaking up until browned, about 7-10 minutes.
- Add the chili powder, paprika, cumin, salt and pepper. Stir and simmer on low for a few minutes more.
- Slice the sweet potatoes in half and mash the flesh with a fork. Stuff them with the beef mixture and top with onions, salsa, guacamole, jalapenos and cilantro.
