Sweet Potato Brownies

Ingredients

  • 1 large sweet potato (baked at 450 until fork tender approx. 35 minutes)
  • 1 cup almond butter
  • 1/2 cup cacao or cocoa powder
  • 1/4 cup maple syrup or honey
  • 1/2 cup coconut oil melted
  • 1/2 tsp. Baking soda
  • 1 tbsp. Vanilla
  • 1 tsp. Salt
  • 2 eggs
  • ΒΌ cup dark chocolate chips (Enjoy Life has paleo chocolate chips)

Instructions

  1. Preheat oven to 350F.
  2. Combine flax meal & water in a small bowl and let sit for 5 minutes.
  3. Remove skin from sweet potato and add to blender/food processor along with all other ingredients except chocolate chips.
  4. Blend until combined then stir in chocolate chips & pour mixture into a greased baking pan.
  5. Bake at 350 for 30 min or until fork inserted comes out clean.
  6. Enjoy
