Sweet Potato Brownies

Ingredients

- 1 large sweet potato (baked at 450 until fork tender approx. 35 minutes)
- 1 cup almond butter
- 1/2 cup cacao or cocoa powder
- 1/4 cup maple syrup or honey
- 1/2 cup coconut oil melted
- 1/2 tsp. Baking soda
- 1 tbsp. Vanilla
- 1 tsp. Salt
- 2 eggs
- ΒΌ cup dark chocolate chips (Enjoy Life has paleo chocolate chips)
Instructions
- Preheat oven to 350F.
- Combine flax meal & water in a small bowl and let sit for 5 minutes.
- Remove skin from sweet potato and add to blender/food processor along with all other ingredients except chocolate chips.
- Blend until combined then stir in chocolate chips & pour mixture into a greased baking pan.
- Bake at 350 for 30 min or until fork inserted comes out clean.
