Paleo Key Lime Pie Bars
These bars are easy to make and the perfect refreshing dessert to bring to a summer BBQ. They are decadent yet healthy with no refined sugar, dairy or gluten.

Crust
- ¾ cup almond flour
- ¼ cup coconut oil, melted
- 3 tablespoons honey
- ½ teaspoon vanilla
- ¼ teaspoon salt
Filling
- (2) 15 ounce cans coconut milk, solid cream only and refrigerated overnight
- Zest of two limes
- Juice of two limes
- ¼ cup honey
- Lime slices and zest for topping
Instructions
- Preheat the oven to 350 degrees and line an 8×8 inch baking dish with parchment paper. In a small mixing bowl, stir together the almond flour, coconut oil, honey, vanilla and salt. Press the mixture into the baking dish in an even layer and bake for 10 minutes.
- Allow the crust to cool while making the filling. Scoop the solid cream portion of the two cans of coconut milk into the bowl of a stand mixer (reserve the liquid portion for another use). Beat on high speed for about 5 minutes until fluffy.
- Add the lime juice, lime zest and honey and beat for another 2 minutes.
- Pour the filling over the crust and smooth with a spatula. Freeze for at least 2 hours.
- Lift the parchment paper to remove the bars from the baking dish. Slice into 9 bars and top with lime zest and lime slices.
