Vegan Paleo Sunshine Wraps with Sunshine Dipping Sauce

  • 4 nori sheets
  • 1 cucumber, cut into matchsticks
  • 1 cup sprouts
  • 2 medium carrots, cut into matchsticks or peeled into ribbons

For the sauce:

  • ½ cup sunbutter/almond butter or other nut/seed butter of choice
  • 2 garlic cloves, finely minced
  • 1 small serrano pepper, finely minced
  • 2 tbsp coconut aminos
  • 2 tbsp full-fat coconut milk


  1. Cut up vegetables
  2. Create your wraps by setting down a sheet of nori, placing ¼ of the cucumber on one side, carrots, and ¼ cup of sprouts.
  3. Tightly roll the nori sheet (option to use a tiny bit of water on your finger tip to seal the end of the sheet closed)
  4. To make the sauce: in a saucepan on low heat, add nut/seed butter, garlic, serrano pepper, coconut aminos, and full fat coconut milk. Stir and cook on low heat for approximately 5 minutes or until aromatic.
  5. Enjoy your wraps dipped into your sunshine sauce!
